In 2009, Dr. Dean Yimoyines and his family chose their hometown of Middlebury, Connecticut as the place to build a unique furniture showroom & gift shoppe. As Middlebury Consignment quickly became an all-day destination, they realized their customers would need a place to eat. Starting from a simple cafe, this eatery has taken a leap towards becoming one of Connecticut’s best restaurants: Vyne.
With the opening of Vyne, the Yimoyines family is returning to their roots. Dr. Yimoyines’ father, Constantine, owned the iconic Les Shaw’s – today fondly remembered throughout greater New Haven.

A master of flavor, Chef Trudeau is a graduate of the Culinary Institute of America, and brings more than 20 years’ experience in executive restaurant management.

For months, Nelson worked with our Executive Chef Micheal Trudeau to offer you a list of the finest wines to pair with our complex and flavorful dishes.
A Waterbury native, Nelson graduated from the Hotel Management University in Lausanne, Switzerland. After an extensive field study throughout the wine regions of the world, he became a professor and taught for 16 years at the School of Hospitality Management in Miami.
Nelson is here to help you with any suggestions you may need for the best wine to pair with the chef’s cuisine.
