In 2009, Dr. Dean Yimoyines and his family chose their hometown of Middlebury, Connecticut as the place to build a unique furniture showroom & gift shoppe. As Middlebury Consignment quickly became an all-day destination, they realized their customers would need a place to eat. Starting from a simple cafe, this eatery has taken a leap towards becoming one of Connecticut’s best restaurants: Vyne.
With the opening of Vyne, the Yimoyines family is returning to their roots. Dr. Yimoyines’ father, Constantine, owned the iconic Les Shaw’s – today fondly remembered throughout greater New Haven.

Tom KaldyExecutive Chef
As a young teen, Chef Tom Kaldy fell in love with food. From his beginnings, as a 13 year old, he help turn a formerly empty space into a fully functioning and well regarded pizza restaurant. It was an experience that lit the fire and triggered a creative process that drove him to begin a life in the restaurant business.
In his hometown of South Windsor, CT, Tom could be found rising in the kitchen ranks of the local restaurants through his middle teen years. At 16, he knew he had found his calling and devoted his studies toward improving his culinary techniques. Tom began his studies locally at Bristol TEC and then later at the prestigious Culinary Institute of America in Hyde Park, NY.
Leaving the classroom didn’t end the education. Tom continued to refine his craft by working under some of the world’s best chefs. Tom has worked in Thomas Keller’s classic French bistro Bouchon, in sustainable seafood pioneer Rick Moonen’s RM Seafood, as well as in the Michelin–rated chef Bradley Ogden’s self-named Bay area restaurant.
In 2012, he joined the management of the eighty-year-old, timeless, classic Cavey’s Restaurant in Manchester. While working with owner Stephen Cavagnaro, he eagerly engulfed himself in the local and seasonal aspects of Cavagnaro’s menu. Working with farms whose relationships had been in set in place for decades
Tom then served as Chef de Cuisine of Artisan Restaurant in West Hartford, CT. Chef Kaldy worked directly with Executive Chef Frederic Kieffer to source the highest quality ingredients the area has to offer.
The culmination of his years of learning and experimenting has led him to where he is today, the Executive Chef at Vyne restaurant & bar. Chef Kaldy leads the team of what Connecticut Magazine’s experts listed as “Best New Restaurant” in the state.
